How do I stop my ground beef from falling apart when making a patty?
I want to make hamburgers, but when i make the patty it falls apart.
No, I haven’t tried eggs :(
Do I just put one egg in?
Its only 1 pound of meat.

no no no….if you are making a HAMBURGER patty- do not add egg! Then it will have the consistency of meatloaf! Meatloaf is all fine and good, but NOT when you are hungry for a patty! But, when you are making a good old fashioned burger- you need to pack it together. I form it into a ball and throw it hard from one hand to another. Do that a few times. Also, you need to cook it fast on a high heat so it sears- and then turn the heat down to cook it through. I hope this helps. But no matter what…..PLEASE do NOT add an egg.

Add an egg yolk or two. And squeeze it together really well!
My Mom always taught me to add a little corn starch as it helps keep it together.

You can add an egg to the mix, really mix well, take time making the patties and if possible have the butcher grind it twice.
add an egg and 1-2 slices of wet bread torn up, sounds weird but it really works well. and sorta mush it around
You don’t need egg. And if you add bread crumbs you are then making meatloaf patties. Not the same.
Knead the meat tight.
Roll the meat with out a rolling pin to desired thickness.
Then use a large can (or similar tool) as a cookie cutter on the beef. This will create a clean cut around each patty.
The tightly packed beef and clean circumference will minimize both the patties falling completely apart as well as splitting (and falling off) on the edges as they are cooked.
