How much items should I bring to a craft fair that is two days and its avg. attendance is 50,000?

I am selling cupcakes, brownies and cookies. I was thinking to bring 3500 of each item bringing the actual total to 10,500 items. I must add that I am the only baker.

They would also have the choice with Chocolate or Vanilla ice cream with the choice, please help!

The box says use vegetable oil, but I think I"d rather not. I have canola oil and extra virgin olive oil; which is better for brownies?
What is the best way to ship cookies long distances?

I am sending a package to my cousin who is overseas in the military. I would like to send some type of cookies or brownies or something, but I am nervous that they will mold or go stale before they get there.
I would really appreciate suggestions on how to keep them fresh and what type of cookies to send (nothing that could melt, obviously!)
