Italian Pasta Salad Recipe – Loaded with Great Stuff! Ingredients: 2 pounds dry 3-color rotoni noodles 2 cups Italian dressing 1 jar pitted black olives 1 jar peperoncini 1 jar marinated artichokes 1 jar green olives 1 jar Italian garden mix 1 jar sweet cherry peppers 4 oz. diced dry Italian salami 8 cup cubed mozzarella and pepper jack cheese 1 tablespoon vegetable oil Procedure: 1. In large pot add vegetable oil to salted water 2. Cook pasta for 14 minutes – drain and cool with cold water 3. Remove liquids from all containers except artichokes 4. Combine all ingredients and mix with Italian dressing

How to make homemade pasta INGREDIENTS YOU WILL NEED TO MAKE HOMEMADE PASTA: Flour (3 cups) Salt (2 tsp.) Eggs (5) HOW TO MAKE HOMEMADE PASTA: First you will need to mix the pasta dough, we use a stand mixer but you can mix the dough by hand if you like. Put 3 cups of flour in the mixing bowl and add 2 tsp. of salt mix together and then add each egg one at a time slowly. We use a flat beater with our mixer and within a few minutes the dough is ready when it starts sticking to itself. Place some flour on a work surface and flatten the dough to a thickness of 1 inch by hand and then cut into four equal pieces. Take each piece and flatten it out a little more and make sure they are fully coated with flour. Now we are ready to roll out the pasta dough, we have an attachment for our mixer that rolls out the dough for us. First set the roller to the thickest setting and run each piece of the dough through once. Use flour on the pieces so they won’t stick. Then repeat the process 2-4 times, be sure to fold the dough in half before running it through again. This process will knead the dough and make it a smooth texture. (note: if you don’t have a rolling attachment for your mixer, use a rolling pin to work the dough. ) After you have kneaded the four pieces of dough reset the roller to the thinnest setting (or however thick you enjoy your pasta) and run each piece through the roller once. Betty’s Ranch Roundup Pasta Salad Recipe
In this video, Betty demonstrates how to make her Ranch Roundup Pasta salad. This is a salad filled with pasta, broccoli florets, zucchini, purple onion, green peas, and grape tomatoes, topped with a tangy Parmesan cheese and Ranch dressing blend. Scrumptious and filling! Ingredients: 8 oz. fusilli pasta (You may use any type of pasta that you like in a salad.) ½ teaspoon salt 1 cup fresh broccoli florets 1 cup diced zucchini (unpeeled) ½ purple onion, thinly sliced into quarter-rings ½ cup frozen green peas, thawed 1 cup grape tomatoes, halved (You may use cherry tomatoes.) ¼ cup sliced ripe olives ½ cup grated Parmesan cheese ¾ cup ranch dressing Cook 8 oz. fusilli pasta according to package directions. (I added ½ teaspoon salt to the boiling water before adding the pasta.) Drain and set aside, until you are ready to assemble your salad. In a large bowl, place cooked fusilli, along with 1 cup broccoli florets, 1 cup diced zucchini, ½ sliced purple onion, ½ cup frozen green peas (thawed),1 cup halved grape tomatoes, and ¼ cup sliced ripe olives. Add ½ cup grated Parmesan cheese and ¾ cup ranch dressing. Mix gently until all salad ingredients are coated with dressing. Cover with plastic wrap, and chill until ready to serve.
