Garlic Shrimp Recipe
Hawaii is known for its white sand beaches, tropical climate and fun water sports. But any food lover wil tell you that the real draw on Oahu is the fresh garlic shrimp, served at roadside shrimp trucks along the North Shore. Chef Jason Hill shows you how to make garlic shrimp scampi modeled after the famous shrimp shacks in Kahuku. At our favorite stop, Giovanni’s shrimp truck, in Kahuku, each plate includes 12 shrimp with two mounds of steamed sticky calrose rice and a lemon wedge. Hawaiian Shrimp Truck Scampi 10 shell-on U-15 (extra large) shrimp, deveined 1 head (10 cloves) garlic, peeled and roughly chopped 1 cup flour 2 tablespoons paprika 1/4 teaspoon cayenne pepper (1 tablespoon for spicier tastes) 1/2 stick clarified butter (see our video recipe) 1/2 teaspoon salt 1/8 cup white wine 2 tablespoons regular butter To begin, rinse and thaw your large shrimp in cool running water. Lightly pat dry. In a wide tupperware dish, place the flour, paprika and cayenne pepper. Mix lightly with your hands and coat each piece of shrimp on both sides. Heat saute pan over high heat. Add clarified butter and garlic. Stir for 1 minute, then add all of the shrimp, which has been coated in the flour mixture. Saute 3 minutes on each side. After 3 minutes on the second side, add the 1/8 cup of white wine and 2 tablespoons butter. Saute, turning shrimp occasionally, until it reaches a caramel brown color …

Jasons Pasta Bake Carrot, Onion, Celery, Garlic sauté until onion is clear and veg is soft. Remove from the pan and fry any other vegetables such as Courgette, Peppers That you may like to add. Remove from pan, at this point you can if you want Fry off some mince or meat balls until brown then add all the cooked vegetables. Add your favourite pasta sauce or Passata sieved tomatoes or 2 cans of chopped tomatoes. At this point you can add some mixed herbs or some from the garden. Simmer for approx 30 min. while this is happening Boil the pasta in boiling salted water until al dente not too soft! Add the pasta to the sauce and Meatballs with vegetables. Stir and pour into Oven proof dish. In Saucepan over a low heat melt 2 large knobs of butter with 2 table spoons of plain flour, mix in to a Roux when both ingredients are combined stir in just over half a pint of milk and bring up to just before boiling point stirring all the time. When the white sauce clings to the back of the spoon if required add some cheese of your choice. And stir in. Once melted pour on top of the pasta. At this point you can grate some more cheese of your choice for something special cut up some mozzarella and place on the top of the bake. Place in a medium oven for approx 30 min or until hot. BBQ Chicken Recipe
Chef Jason Hill of www.CookingSessions.com shows you make a delicious and easy BBQ chicken recipe in this episode of “Chef Tips.” After visiting the North Shore’s roadside huli huli chicken stands, Jason heads home to the chicken to share his version of Hawaiian BBQ chicken. First, prepare your BBQ chicken marinade the day before you plan to grill. Though you can prepare this as a BBQ rotisserie chicken, the results are more flavorful when you cut chicken into pieces. This recipe for BBQ chicken uses a flavorful marinade that includes brown sugar, honey, pineapple juice, sesame oil, fresh grated ginger and crushed garlic. When cooking BBQ chicken, consider using a smoker box. For authentic Hawaiian BBQ, use kiawe wood (known in America as mesquite chips). Once the honey BBQ chicken sauce has soaked into the meat overnight, remove from the refrigerator and cook over high heat, skin side down, turning a couple times. Then, move to the low burner and shut the lid, where it will slowly cook and smoke for about 30 minutes, or until the internal temperature reaches 165 F. Hard Boiled Eggs

This eliminates the greenish brown ring from forming around the yolk. To peel hard boiled eggs the easiest way, simply run them under cool running water and remove the shell.
Grilling Lobster Tails
Grilling lobster tails is quick and easy thanks to this easy method from Chef Jason Hill. Many people are intimidated on how to cook lobster, but grilled lobster tails are an impressive and simple way to go. If you have a Maine lobster or other variety of lobster, simply split the tails in half and rinse under cool water. Lobster tail recipes are best when made with a scampi-style butter, garlic and parsley sauce. Hill’s recipe for grilled lobster tails uses this method, first by cooking lobster tails on the grill, and then by finishing them off in a saute pan. Following are the ingredients you’ll need: 2 (8 oz.) lobster tails 2 tablespoons chive oil or extra virgin olive oil 1 teaspoon garlic-shallot puree (or 2 crushed garlic cloves) 1/2 stick butter 2 tablespoons fresh chopped parsley 2 cups water (use as needed) Salt and pepper (as desired) First, lay the lobster tail on its back. With your knife, set it on the tip of tail. Push knife down into meat and crack through the back of the shell. Gently pull meat apart from the shell, but not completely. Rinse lobster under cool water. Pat dry. Drizzle chive oil or olive oil over the meat. Cover and put in the refrigerator in 30 minutes. Preheat your outdoor gas grill.
